The Footballfish is a type of monkfish that lives in the deep dark sea.
Because the football fish is not a strong swimmer. He tends to lose his prey easily when he tries to pursue them.
However, he is a master of disguise and
he hides his body under the sand of sea bottom. Then uses his modified ray (which looks like a "fishing rod" on his head).
On the end of that rod is a luminous bulb which is used to attract smaller fish in the dark abyss. This style defines his unique funny character...
The soft, warm kind light beam from his rod somewhat plays a role of "comfortable spot" where everybody seeks to hang around in the dark deep sea.
We find it as a great metaphor that describes what we need in our current busy society. In the crazy busy world we are in now, everyone is looking for a place and time to relax and refresh.
We are hoping that "An-chan's rod will attract you, and JaBistro will be the "cozy spot" for you to hang around in the dark deep sea.

JaBistro Food philosophy
Food plays a basic, yet crucial role for living.
Maintaining quality and safety of food is one of the most important elements when it comes to keeping your life healthy and satisfying.
However, if the food wasn't tasty, we wouldn't even know how to appreciate it.
In our philosophy of food, each ingredient has to be brought to shine at its best with our unique technique. There is nothing "ordinary" in our food.
For instance, when we think of Tuna fish, eating it with Sashimi style seems to be too blank.
How about making Sushi with the perfect amount of Shari?(vinegared rice for sushi). Or How about perfect cut of Neta?(flesh of fish for sushi).
This perfect combination will bring Tuna to the finest level of its taste and texture. In addition to this perfect combination, we use our special soy sauce called "Nikiri-shoyu (soy sauce that is simmered down)" which has slight sweetness and rich Umami flavour for dipping.
As a result, The Tuna will be no longer bland. Rather it will be full of flavour and color making your palate sing.
We always seek the best match for different ingredients. Different fish need different sauce. different meat need different seasoning... this is how our food should be.
